Will Bon Pavilion turn Gosford into a foodie destination?

A new star on the NSW Central Coast

Proud long-term Central Coast resident John ‘Singo’ Singleton is passionate about the place he calls home.

Singo and his team have developed numerous projects that have brought international attention to the region and New South Wales more broadly, including Bells at Killcare Boutique Hotel, Restaurant & Spa; award-winning Pretty Beach House; Gosford Stadium; and, most recently, the Bonython Tower in central Gosford and the Ravello residences, a luxury waterfront apartment block at Point Frederick.

The 14-storey Bonython Tower is a fully integrated residential and commercial building where the occupants can share the hospitality of the Bon Pavilion with CBD residents and visitors alike.

In his usual style and flair, Singo’s dream was to create a restaurant not offered on the coast before.

To help realise The Bon Pavilion, he has reunited with the team that successfully delivered Bells at Killcare and Pretty Beach House, Brian and Karina Barry.

The Barrys are experienced hospitality professionals who managed the Hunter Valley Resort at Pokolbin, worked with Singo at Bluetongue Brewery and purchased Bells at Killcare from Singo in 2016 after their successful tenure as managers. They also continue to manage the luxurious Pretty Beach House.

Celebrity chef

The last part of the intriguing match-up has been the appointment of an executive chef. Enter Sean Connolly, who runs five successful establishments in Australia and New Zealand and is well known for his various television shows, cookbooks, products and a myriad of awards.

Karina Barry says, “We have followed Sean’s illustrious career for many years. His food philosophy focuses heavily on ethically sourced produce and premium suppliers, which Brian and I feel very strongly about.”

“I find as I get older, the simpler my food gets,” notes Connolly. “It’s all about the produce driving the flavours. My food looks simple, but there’s a lot of thought process and complexity to the dishes. Good food should speak for itself.”

The Bon Pavilion is a bold project, driven by Singo’s stated desire for “a meeting place in the heart of Gosford for everyone to enjoy”.

The project will encompass seven distinct areas: a cafe; cocktail and tapas bar; family-style dining room; Wi-Fi lounge; bar specialising in craft beers and whisky; a private dining room; and Bon Vin, which will sell quality local and international wines.

Other food and beverage venues include the family-friendly restaurant Bonfire, Bon Bon Espresso, Bon Vin Private Dining and the fun Bon Bar.
