For many years now, Christophe and Josephine Gregoire have run Le Très Bon, a successful French restaurant and cooking school on the outskirts of Canberra. But the couple’s commitment to cuisine goes beyond the restaurant; for the last 14 years they have also run luxury gourmet tours to New Caledonia, France and Italy. These tours give guests the chance to explore the relationship between place and food, while learning about these iconic cuisines from master chef Christophe Gregoire, who has spent a lifetime exploring their intricacies.

This is a tour like no other: it’s a unique opportunity to travel with hosts that have a lifelong experience with the region and the people.
Le Grand Hotel in Gérardmer is your home away from home for the 11 nights of the tour.
This intimate tour includes a host of regional food and wine experiences, with visits to many of the picturesque towns and villages of the region and places of spectacular natural beauty including the 120-kilometre Route des Vins.

New Caledonia holds a special place in the hearts of Chef Christophe and Josephine Gregoire. They met and married in Noumea. They both lived and worked in New Caledonia: Christophe as a head chef at various establishments and teacher at Escoffier Hospitality School, and Josephine as a health promotion specialist with the Secretariat of the Pacific Commission. In 2010, they started their first New Caledonia gourmet tour and have shared their love for this island with their clients ever since.
Drawing from his many years as a chef in the island’s best restaurants, Christophe has curated an itinerary to introduce the best of New Caledonia – and of course, its food, wine and culture – over five fabulous days.

Calabria is sitting on a huge culinary heritage just waiting to be discovered. With encouragement and support from his wife and business partner Josephine, Chef Christophe finds joy in building a strong and vibrant enogastronomic (food and wine) tourism culture in Calabria. This tour is not only endorsed by Chef Christophe, he will also be at hand every day to give cooking demonstrations, teach and provide explanations – because he believes that cooking and sharing food is an enjoyable way of bringing people together.
Tour highlights include experiencing the best of Calabrian cuisine each lunch and dinner, five nights accommodation in a castle (yes, a castle!) at Il Castello di Serragiumenta and regular cooking classes.
