The countdown is on for the opening of the Whitsundays’ new private-island retreat
The travel industry has been abuzz with talk of the upcoming opening of Hayman Island by InterContinental. We find out everything you need to know.
If Hayman Island by InterContinental is ringing bells for you, it might be because the hotel has been touted far and wide as Australia’s most anticipated hotel opening of 2019. The countdown is now well and truly on, with reservations having opened last year in preparation for the property’s debut on 1 July 2019.
About the island
The 400-hectare private island takes pride of place in Australia’s picturesque Whitsundays, internationally renowned as one of the country’s most pristine destinations. Guests will alight from their seaplane, luxury yacht or helicopter to discover secluded beach coves, talcum-powder sands and crystalline waters. Exclusive on-island experiences will include seaplane rides over the Great Barrier Reef, jet ski adventures and, of course, the unequalled snorkelling and diving for which the region is renowned.
Inside the hotel
Following an extensive multi-million-dollar refurbishment, the 166-key resort returns with new life in 2019. Three wings offer a range of accommodation options, ranging from elegant suites to elaborate beachfront villas. Hayman Island’s premier offering is the newly built Three Bedroom Hayman Beach House, which boasts three suites, multiple private pools and complete privacy. All room types offer access to the resort’s facilities and services, including a boutique, kids’ club and fitness centre.
Perhaps most impressive of these facilities is a brand-new luxury spa with 13 treatment rooms. The resort will also offer five distinct dining experiences, ranging from poolside delicacies to memorable restaurant dining, each one inspired by the local flavours and produce of Queensland.
Indoor and outdoor meeting and event spaces – catering for anywhere from 10 to 300 guests – appeal to corporate guests, while for weddings, there is an on-island chapel and exceptional reception locations.

Three culinary heavyweights have been appointed to lead the five dining experiences on the island: Joshua Dows, Director of Restaurants and Bars; Erwin Joven, Director of Kitchens; and Anthony Kramer, Executive Sous Chef. Each has extensive experience catering for a discerning clientele, be it on board cruise ships or in remote resorts.
These three are the guiding force behind the island’s five dining destinations and bar offerings: Pacific, AQUA, Amici Trattoria, Bam Bam and Bar Fifty.
Pacific is the resort’s signature brasserie-style bar and restaurant. It offers a gourmet buffet breakfast in the morning and sophisticated à la carte dining into the evening.
AQUA is perched on the side of the Hayman® Pool, offering a refreshing menu of easy-to-share seafood dishes, tropical fruit juices, fresh salad bowls and classic cocktails.
Amici Trattoria has a blazing wood-fired pizza oven at its heart. The casual Italian menu features pizza, pasta and an Australian wine list starring Italian grape varietals.
Bam Bam serves up Pan-Asian cuisine infused with a fresh Australian twist. Specialties will include wok-tossed noodles and sugarcane juices, packed with punchy flavours.
Bar Fifty, right in the centre of the resort’s lobby, is an international icon, having served sophisticated cocktails to globetrotters since the 1950s. Bar Fifty pays homage to its distinguished past, reopening with twists on familiar favourites, classic cocktails, canapés and light bites.
