The spirit of summer: Our top summer cocktails for the new year
Australia’s long, languid summer days are made for sipping cocktails in the sun, preferably beside the pool. We’ve gathered some of our favourite spirits and mixers to add to your drinks cabinet in 2019.
Scotch meets summer
Chivas XV has been 15 years in the making, finished in Cognac casks for a final flourish. The blend unites aged malt and grain whiskies, creating a smooth, velvety spirit with flavours of poached pears and butterscotch with a hint of vanilla. It adds a smooth and fruity note to Whisky Sours and Old Fashioneds – perfect for a summery take on these warming classics.

- 50ml Chivas XV
- 25ml fresh lemon juice
- 20ml oleo-saccharum
- 20ml egg white
To make oleo-saccharum, add lemon, orange and lime peel to granulated sugar. Sit for 6 hours then pour off the oil. Add all ingredients into a shaker and dry shake. Add ice and shake again. Remove ice and shake again. Strain into chilled Coupe glass.
Ready to rum
Is it even a party without rum? Mount Gay dates to 1703, making it the world’s oldest rum producer and an authority on this complex spirit. - 50ml Mount Gay Black Barrel
- 20ml lime juice
- 10ml coconut syrup
- 15ml Licor 43
- 2 dashes cherry bitters
- Crushed ice
Pour rum and Licor 43 over ice in a Collins glass. Add lime juice, coconut syrup and cherry bitters. Stir well.

- Sparkling apple juice, to top
- 4-5 mint leaves
- Lemon slice and mint sprig
Add mint and whisky to a rocks glass, fill with ice and top with sparkling apple juice. Garnish with a slice of lemon and a mint sprig.
