Mondrian Singapore Duxton is staffed by an all-star cast across the fields of hospitality, cuisine, design, fashion, nightlife, and art. Mondrian is a food- and fashion-forward culinary destination for locals and travellers alike. A restaurant, café, cocktail bar, and rooftop bar and restaurant combine historic architecture from Singapore’s centuries-old shophouses with contemporary influences, with interiors designed by Studio Carter.

Dario Cecchini, hailed by the New York Times as the ‘world’s greatest butcher’ and star of Netflix’s Chef’s Table, presides over Mondrian’s flagship dining experience, Bottega di Carna, a modern Italian eatery showcasing classic and unexpected cuts as pieces of art, reimagined crudos and charcuterie, handmade pasta, fired steaks and fish, and bold progressive wines. Executive chef Alastair Clayton, chef de cuisine Kenny Huang, and their team add to the theatre of the open kitchen with prime cuts hanging like jewels in display cases.

“I always try to understand a culture by its street food, what the roots are, what the people eat. And after having a lovely plate of chicken rice, I understood that yes, this is going to be a success. The people of Singapore already have in their DNA this innate sense that it is important to use everything from the animal well,” says Cecchini, whose respect for animals is informed by both his family’s traditions and from his time studying veterinary science at the University of Pisa.

“You must guarantee the animal a good life and a dignified death, and use every part of the animal well. What began as an economic necessity is now an ethical imperative. We should leave this world a little bit better than we found it. When you eat meat you must be respectful, reverential,” says Cecchini.

Restaurants, bars and cafes at Mondrian Singapore Duxton

Accessed by a secret tunnel and boasting an aesthetic that celebrates the vibrancy and wild nature of Southeast Asia, Jungle Ballroom is a tropical cocktail lounge with mixologists serving up libations from a sunken lava stone bar amid glimpses of the lush jungle outside. Christina’s offers a refuge from the hustle and bustle of the city, with coffee brewed by award-winning baristas by day, while by night the space transforms into a devoted wine, cocktail, and tapas-style venue curated in partnership with some of Singapore’s best artisans. The rooftop bar, Canyon Club, will transport guests to 1970s Hollywood and gift revellers with poolside cabanas and sweeping views of Singapore’s skyline. Fresh, seafood-forward dishes and colourful crafted cocktails are the highlights of this California-inspired menu.
