This winter, embark on a culinary journey through the aromatic world of truffles at Mode Kitchen & Bar, Four Seasons Hotel Sydney, launching Tuesday 9 July 2024.

Executive chef Francesco Mannelli and his team have crafted a rich menu of winter favourites featuring seasonal fresh produce, with a selection of standout dishes accented by the fragrance of the ingredient of the season — decadent black truffle.

Truffle season will be celebrated through various indulgent offerings on Mode’s winter menu. Those looking for something light can enjoy Chef’s signature zucchini flowers with buffalo ricotta and peas, or indulge in a vegetarian tagliatelle ‘ripiene’. Generous shavings of black truffle are available on request for both dishes.

For those looking for something more adventurous, a hearty 180g filetto rossini with grass and morel mushrooms and flavourful truffle jus will hit the spot. Indulge in the ultimate decadence of a daily special of risotto acquerello and fresh black truffle.

Sagra: A Celebration of Wine & Truffle

On 8 August 2024, Mode Kitchen & Bar will unveil Sagra: A Celebration of Wine & Truffle, a vibrant, market-style restaurant takeover with signature truffle-infused dishes served via animated live stations.

Discover five unique live stations throughout this one-night-only event:

Antipasti & Pasta: Sample rich gnocco fritto and tagliatelle infused with truffles and finished in a parmigiano wheel.

Pizza: Bite into handmade pizza dough topped with creamy brie and dark truffles, a match made in heaven.

Risotto & Wagyu: Indulge in a rich risotto with black truffle and hazelnut paired alongside a wagyu mayura station oyster blade, black truffle and egg yolk emulsion.

Secondi & Sides: Enjoy succulent wagyu rump with polenta and a fagioli al fiasco with truffles.

Dessert: Nothing is more authentically Italian than tiramisu topped with delicate shavings of black truffle – sweet and savoury at its finest.

This meal will be elevated with Italian wine pairings curated by sommeliers on the night. Guests will enjoy an evening celebrating the flavours of truffle in a relaxed Italian-inspired setting.
