From a huge block of ice at the bar’s focal point, bartenders carve off great slabs, concocting Charlie’s signature takes on classic cocktails around it. Not to be missed is the house-made, rose petal-infused speciality spirits.

Raspberry Martini

Ingredients:
45ml vodka
9 raspberries (frozen or fresh)
10ml lime juice
10ml egg white
15ml liquid fructose

Instruments:
Cocktail shaker
Muddling stick

Method:
1. Placing approximately six raspberries in the cocktail shaker and using the muddler, muddle the berries in a smooth paste-like consistency.
2. Add the egg white, fresh lime juice and vodka, then shake.
3. Pour the drink into a chilled martini glass and for decoration add three frozen raspberries to the top of the drink.
4. Enjoy!
