The globally acclaimed chef will be applying his famous ‘Cook the Mountain’ ethos at the hotel, reinterpreted to include the produce of Venetian shores.
Luxury property, Aman Venice, has expanded their culinary team and welcomed aboard three-Michelin-starred chef, Norbert Niederkofler, as Consultant Chef. While still retaining his position as Executive Chef of St Hubertus at Rosa Alpina Hotel and Spa, Chef Norbert will join Executive Chef, Dario Ossola, at the hotel to create menus with culinary flair across the board, including that of their signature restaurant, Arva.
Chef Norbert is renowned for his culinary philosophy that revolves around only using locally grown produce, aptly referred to as ‘Cook the Mountain’. In accordance with the environment surrounding Venice, he has developed ‘Cook the Lagoon’, which will see the hotel sourcing fresh seasonal produce from the Rialto Market, Venetian lagoon and the Italian city’s islands.
Originally from South Tyrol, Chef Norbert trained with the best before joining the Rosa Alpina in 1994 as Executive Chef, where he has remained ever since. After developing ‘Cook the Mountain’ and putting St Hubertus on the culinary map, he found a home for his ethos in 2018 at AlpiNN Food Space & Restaurant.
In addition to crafting culinary experiences and delectable dishes at Aman Venice, Chef Norbert will hold collaborative events at the hotel on specific dates throughout the year, joining forces with a range of famous chefs to offer a four handed dinner at Arva.
